It’s Fresh

Farmers and ranchers raise lambs in nearly every state in the U.S., making fresh lamb meat available wherever you are. However, over 50% of the lambs that are consumed in the country are imported from Australia and New Zealand. When you choose ours, you are getting lambs that are up to 10,000 miles and 30 days fresher than those that are imported.

It's Available All Year Round

We closely manage the breeding of our sheep so that lambs are born all year round and meat is therefore available all year round.

Our lamb meat is processed at either a USDA-inspected or Texas State Health Department-inspected abattoir. All cut products are cryovac'd and frozen at the processor, and kept frozen until sold.

It's Flavorful

The distinct flavor of our product is a result of natural pasture, superior genetics, and an excellent diet. Dorper Lamb is milder than wool sheep lamb meat, due to a lack of lanolin in its system, they do not have a waxy or gamey taste. Nor do they have thick exterior fat layer. This means that their meat is leaner and healthier!

It’s Better for the Environment

We believe in committing to quality and conservation. Lambs improve pasture and rangeland by cycling vital nutrients back through the soil. This process minimizes erosion and encourages native plant growth. In turn, sheep that have a steady diet of a variety of nutrient-filled grasses, legumes, and forage will produce succulent, tender meat. Also, buying local will decrease transportation related costs and emissions.

People have taste-tested the Dorper meat and liked it better than lamb from other breeds of sheep. Dorpers do not grow a long wool coat, so they don't produce much lanolin, nor have a thick fat layer to nourish wool growth. This means that their meat is leaner and healthier!

Lamb meat is a flavorful, nutrient-rich food and an excellent source of protein, Vitamin B12, Vitamin B6, niacin, zinc and selenium.  Lamb is a high-quality protein source, providing all nine essential amino acids your body needs for growth and maintenance.

Our Dorper lambs are less than a year old when they reach 100-110 pounds. By this age intra-muscular marbling has developed, so they are very tender, but young enough to not be at all "musky". And, with less fat at a younger age, there is less waste in processing to the final cuts.

Lambs stay with their mothers until they are weaned and continue to pasture in family groups.  They are not placed in feedlots or forced to consume a predominantly corn- or grain-based diet to fatten up at the end of their life.  Instead, they eat grass solely from our farm, along with a high-vitamin & mineral multi-grain supplement for a balanced diet.  We honor them and the purpose in their lives by giving them excellent care and gentle handling.

Process for Ordering and Pick-up in San Antonio

Complete the form below, to request specific cuts of lamb. Once you have sent in your request, I will send you an email to let you know what weight of those cuts are currently available, and their prices. I will then need a response from you committing to the order for it to be ready for the next step. You can choose between two options for payment:

  • Pay when you pick up at the Pearl Farmers Market on Saturdays.
  • Pay in advance with the PayPal link that I will send to you via email.

You can pick up the order at the Pearl Farmers Market on the next Saturday. You will not be able to pick it up without
payment in full. Please make sure to give us the email you want to correspond with for any questions or concerns with your order.

Complete the form below, to request specific cuts of lamb. Once we receive your request, I will send you an email to let you know what weight of those cuts are currently available, and their prices. I will then need a response from you committing to the order for it to be ready for the next step. Please include in that email that you wish the order to be shipped, and provide the shipping address, so I can calculate the shipping cost.

Within Texas, "ground" shipping less than 10 pounds with a carrier (USPS or FedEx) can usually be delivered withing one day, so we can keep the shipping cost low. However, outside of Texas, shipping costs are much, much higher. I will email you a total cost invoice you can pay online.
